Recipe for Butter Fried Chicken Hearts: https://www.ketofocus.com/recipes/keto-butter-fried-chicken-hearts/
BUTTER FRIED CHICKEN HEARTS
1 lb chicken hearts
3 tablespoons butter
Heat a small cast iron skillet over medium-high heat. Add the butter and cook until melted, browned, and has a nutty aroma.
Add the chicken hearts and toss them in the skillet to make sure all sides cook evenly. DO NOT OVERCOOK THEM. Cook for no more than 2 minutes.
MACROS (per serving)
BACON & CHEESE STUFFED BURGER
1 pound ground beef
1 cup shredded cheese
4 slices cooked bacon, crumbled
Divide the ground beef into 8 portions. Make boats out of 4 of the patties. Stuff each boat patty with ¼ of the shredded cheese and ¼ of the bacon.
Put the remaining patties on top of each stuffed boat patty and seal the edges.
Grill, bake or fry until cooked through. Top with a cooked egg.
MACROS (per burger)
Pork shoulder or butt (5-10 lbs)
½ teaspoon kosher salt per pound of meat
The night before, rinse the pork and pat dry with a paper towel. Rub salt all of the pork and refrigerate overnight.
¼ cup golden monkfruit (omit if eating carnivore)
¼ cup paprika
2 tablespoons garlic powder
2 tablespoons black pepper
2 tablespoons ginger
2 tablespoons onion powder
2 teaspoons dried rosemary, crushed
Combine the rub ingredients in a small bowl and mix until combined. Wet the pork with wet hands so the rub sticks to the meat better. Rub the seasoning all over the pork. Cook in a smoker, oven or traeger grill at 225 degrees for 8-12 hours or until internal temp is 195 to 203.
**Recipe adapted from Meathead Goldwyn’s book Meathead**
I didn’t calculate macros for this because it depends on the size of your pork shoulder. So if you want to figure the macros, just look up the macros for pork shoulder or butt on MyFitnessPal. I also figure you wouldn’t need to take into account the carbs from the seasoning as that is just applied to the outer layer and it would be negligible.
